A not-too-veggie tasting cauliflower smoothie, this one is filled with plenty of vegetables (kale, beet, cauliflower, and zucchini) but it tastes like fruit! With frozen banana adding lots of creaminess and some sweetness from raspberries, it's a great introduction to adding vegetables to your smoothies.

Ingredient Notes and Substitutions

  • Cauliflower: you can buy frozen cauliflower now, but I usually freeze it myself. No need to blanch, just pop florets right into the freezer.
  • Beet: this can be any colour of beetroot. It does have a pretty strong earthy taste, so reduce it if you're not such a fan.
  • Banana: the riper the banana, the sweeter your smoothie will be.
  • Raspberries: sub another berry like strawberries if you prefer. Strawberries in particular will make for a slightly sweeter smoothie.
  • Hemp hearts: if you don't have them, you can sub a scoop of protein powder or nut butter instead.
  • Milk: I always use almond milk, but any non-dairy milk can be used.

Step 1: add all of the ingredients to a blender.

Step 2: mix on high speed until very smooth and serve immediately.

Top Tips

  • Freeze in advance: the banana, cauliflower, kale, and zucchini are all frozen before being blended, so you'll need to have them frozen in advance. The kale can be raw but everything else needs to be frozen to get a good thick and creamy texture.
  • Thin if needed: there's a bit of a range provided for the milk, because this is a pretty thick smoothie. Add a splash extra if you like.
  • Sweeten to taste: with no dates or other sweetener added, this is a pretty lightly sweet option. If you need more, add a date or two to the mix.

FAQ

Is cauliflower good in smoothies?

You can't really taste cauliflower in a smoothie. It mostly makes it thicker, but it's a very subtle taste that's overpowered by other ingredients like banana or berries.

Is it safe to put frozen cauliflower in smoothie?

It's fine to use frozen or raw cauliflower in smoothies. If you find that it gives you a bit of upset, simply blanch the cauliflower before freezing.

Why do people put cauliflower in smoothies?

Cauliflower is packed with vitamins and antioxidants (more vitamin C than an orange!) so it provides a good nutrient boost.

Beet Cauliflower Smoothie

Ingredients

  • ¼ Cup Frozen Cauliflower Florets Raw
  • ¼ Cup Frozen Zucchini Raw
  • ¼ cup frozen kale or spinach
  • 1 small beet peeled and chopped
  • 1 Frozen Banana
  • 1 Cup Raspberries fresh or frozen
  • 2 ½ - 3 Cups Almond Milk
  • ¼ teaspoon Vanilla extract
  • 1 tablespoon Hemp Hearts
  • A Scoop of Greens or Protein Powder optional

Instructions

  • Puree all the ingredients in a high speed blender until smooth. You may want to add a little more or less milk depending on your thickness preference.
    ¼ Cup Frozen Cauliflower Florets, ¼ Cup Frozen Zucchini, ¼ cup frozen kale or spinach, 1 small beet, 1 Frozen Banana, 1 Cup Raspberries, 2 ½ - 3 Cups Almond Milk, ¼ teaspoon Vanilla extract, 1 tablespoon Hemp Hearts, A Scoop of Greens or Protein Powder

  5. I am not confident in putting veggies in my smoothies (too many bad and shameful experiences with green smoothies) - and have never even heard of putting cauliflower in them before! This is intriguing and confusing but something I will have to try because cauliflower is so different and delicious.

    1. Lol, I'm sorry to hear that green smoothies were scaring! It's true thought. I hated them at first until I found out the key was spinach (softer, sweeter, less gross) and things like pineapple.

  6. i've been shy about veggies in my smoothies (except for the occasional handful of leafy greens), but cauliflower and zucchini are pretty mild and sweet, so i can imagine how well they'd work in here (: as long as there's a banana (smoothies just don't taste sweet enough to me without it), i'm game for anything!

    1. Banana smoothies for life!! I once found a site with 'savoury smoothies' and I was like "nope, not going to happen". You're right about the veggies being mild and sweet. They basically just add some creaminess and vitamins, and let the fruit be the star.

  8. Yes! I've had such a similar experience with veggies in smoothies but found that frozen cauliflower and zucchini work wonderfully WITH the other ingredients. I also think that it's great that such bug influencers are sharing this concept with the masses. If that's what it takes for people to start incorporating more veggies and trying new things, I'm all for it. This smoothie looks so bright and delicious. The perfect balance of fruits and veggies. xx
