This watermelon limeade is made with just 4 ingredients – watermelon, mint, lime juice, and cucumber. An extra hydrating, juicy drink, it's one of our favourite summer drinks and a cinch to make. Naturally sweet and refreshing with no added sugar!

Pack this for a cute picnic with a vibrant rainbow salad or vegan chopped salad, or whip up some rainbow rolls and bring some hummus and crackers.

Ingredient Notes and Substitutions

  • Watermelon: a ripe melon will be the sweetest, and seedless is easier.
  • Lime juice: fresh is best, but juice from the fridge can be used in a pinch. You can mix lemon and lime too.
  • Mint: spearmint is a little sweeter than peppermint and still has a nice mint taste, but you can use either.
  • Cucumber: any type of cucumber will work, and no need to peel it.

Top Tips

  • Top with sparkling water: or try kombucha or ginger beer for a bit of a twist! I love the mix of watermelon and ginger beer.
  • Sweeten to taste: this is unsweetened, and depending on how sweet the melon is, you might find that it needs a little more. Add a touch of liquid sweetener if needed.
  • Use a less crisp melon: this is the perfect recipe for a melon that's ripe and sweet, but maybe not so crisp.

How to Store

Storage: keep your watermelon smoothie in the fridge for a day or two, covered.

Freezing: if you have some left over, make it into popsicles!

Mint Watermelon Limeade

This watermelon limeade is made with just 4 ingredients – watermelon, mint, lime juice, and cucumber. An extra hydrating, juicy summer drink!

Equipment

  • Measuring cups and spoons

Ingredients

  • ½ Cup Lime Juice 2-4 limes
  • 8 Cups Chopped Watermelon
  • 3 Cups Peeled and Chopped Cucumber
  • Handful Mint about ¼ cup
  • Carbonated Water Optional, for topping

Instructions

  • Puree the lime juice, watermelon, cucumber, and mint in a high speed blender. Pass the juice through a sieve to remove some extra 'pulp' if you'd like more of a watermelon juice. Chill until cold and drink as is, or with a splash of carbonated water for a naturally sweetened pop.
    ½ Cup Lime Juice, 8 Cups Chopped Watermelon, 3 Cups Peeled and Chopped Cucumber, Handful Mint, Carbonated Water
