How to Make Yogurt Toast
The most time-consuming element is making the blueberry topping, and that doesn't take much longer than it does to toast the bread.
Step 1: add the berries, sugar, and lemon juice to a saucepan and cook until warmed through.
Step 2: toast the bread and add a thick layer of yogurt.
Step 3: spoon the berry mixture over the yogurt.
Step 4: swirl the berries and top with lemon zest, then serve.
Top Tips
- Strain your yogurt: most vegan yogurts won't be thick enough for this recipe, but you can strain the yogurt through a couple layers of cheesecloth or in a nut milk bag overnight in the fridge to thicken it.
- Sweeten to taste: adjust the amount of sugar to your personal preference. If you find it's not sweet enough after assembling, add a drizzle of maple syrup or honey.
