  • Chamomile: when buying seeds, choose German chamomile if you plan to use it for tea or other foods, as it's less bitter than Roman.
  • Lavender: if purchasing, make sure it's food-grade lavender. If you use garden plants, either grow it from seed or buy organic plants that are sold with herbs - rather than flowers - or ask to make sure it's edible.

  • Add mint: to vary the recipe, try adding ¼ cup dried mint. It's great for stomach complaints and headaches, so is a nice addition to this tea (and tastes great, too).
  • Use food-grade plants: they ingredients should be labeled as food-grade if you're buying them dried, but also for plants if you want to dry them yourself. Both chamomile and lavender are often sold for crafting, and you don't want to use those for food.
  • Don't increase the lavender: two parts chamomile to one part lavender is just right, and too much lavender will make a soapy tea. Balance is key.

  • Add the chamomile and lavender to a mixing bowl and mix to combine. Optionally add ¼ cup dried mint.
