Oat and Flax Bar

Equipment
- Measuring cups and spoons
- Mixing bowl
- Parchment paper
- 8x8 inch pan
Ingredients
Dry
- 1 cup rolled oats
- ⅓ cup oat flour made by grinding oats in the food processor
- ½ cup unsweetened shredded coconut
- ½ cup dark mini chocolate chips or chopped chocolate bar
- ¼ cup pumpkin seeds
- ½ cup dried cranberries
- ¼ cup flax meal
- ⅛ teaspoon salt
Wet
- ½ cup nut butter
- ¼ cup melted coconut oil
- ¼ cup maple syrup
- 1 teaspoon vanilla extract
Instructions
- Mix all the dry ingredients together.
- In a separate bowl mix all the wet ingredients together.
- Combine the wet and dry ingredients together and press into a parchment lined 8x8 inch pan.
- Refrigerate for a couple of hours to set before slicing.
