Oat and Flax Bar

  • Measuring cups and spoons
  • Mixing bowl
  • Parchment paper
  • 8x8 inch pan



  • 1 cup rolled oats
  • cup oat flour made by grinding oats in the food processor
  • ½ cup unsweetened shredded coconut
  • ½ cup dark mini chocolate chips or chopped chocolate bar
  • ¼ cup pumpkin seeds
  • ½ cup dried cranberries
  • ¼ cup flax meal
  • teaspoon salt


  • ½ cup nut butter
  • ¼ cup melted coconut oil
  • ¼ cup maple syrup
  • 1 teaspoon vanilla extract


  • Mix all the dry ingredients together.
  • In a separate bowl mix all the wet ingredients together.
  • Combine the wet and dry ingredients together and press into a parchment lined 8x8 inch pan.
  • Refrigerate for a couple of hours to set before slicing.
