For the most part, I managed to remember all the goodies that when into these tasty little rolls, except I'm not sure it I added tamari or not...so I suggest tasting the filling and if it isn't salty enough, add 1 teaspoon tamari (see note in recipe).

1 Cup Sun-dried Tomatoes (soaked for atleast 4 hours)
3 Medjool Dates (soaked)
1 Medium Tomato
½ teaspoon Sea Salt
1 ½ tablespoon Apple Cider Vinegar
1 Clove Garlic
Combine all the ingredients in a food processor and puree until smooth. Taste, and adjust seasoning. I like my ketchup to be nice and smooth, so I passed it through a fine sieve. If you have a high quality blender, you could probably skip this step. Lasts for about 1 week.
