Ingredient Notes and Substitutions

  • Olive oil: make sure to choose a flavourful, fruity olive oil. Vegan butter can be a bit bland, and using a good olive oil will make all the difference here.
  • Vegan butter: this can be any type, including spreadable versions, but a block (softened) will have the best taste. I like Miyoko's.
  • Bread: a good white bread, like a baguette, is perfect. For a gluten-free version, try making it with millet bread.
  • Parsley: semi-optional but delicious. You can sub other herbs like thyme if preferred.

How to Make Garlic Bread

Vegan garlic bread steps 1 to 4.

Step 1: add the butter, oil, garlic, and parsley to a mixing bowl.

Step 2: stir to combine well.

Step 3: spread evenly over the bread and top with salt.

Step 4: bake until golden, about 10 minutes.

Top Tips

  • Top with cheese: if you want a cheesy vegan garlic toast, top evenly with about ¼ cup of grated vegan cheese. Mozzarella style is best.
  • Don't over-bake it: the topping should be melted and the bread slightly toasted but not hard. Look for just golden.
  • Serve immediately: garlic bread is best right after baking, when it's still warm and soft in the middle. If it cools down, it will harden.

How to Store

Storage: this doesn't store very well after baking and should be served right away.

Freezing: the bread can be frozen, with the garlic butter mixture spread on it, before baking. Place in an airtight container or wrap well and freeze for up to a month, baking directly from frozen.

FAQ

Is garlic bread American or Italian?

Garlic bread as it's known today originated with Italian immigrants to the U.S. but has been historically served in various formats in France.

Is it better to use olive oil or butter?

A mix of the two is ideal, because then you have the spreading power of vegan butter with the flavour-boost of olive oil.
