Coconut Cloud Smoothie

A copycat of the viral Erewhon coconut cloud smoothie, this dreamy fruit smoothie is made with avocado, banana, pineapple, and coconut yogurt.

Ingredients

  • 2 tablespoons coconut yogurt
  • ¾ cup almond milk or other non-dairy milk
  • ½ frozen avocado
  • ½ frozen banana
  • ¼ cup frozen pineapple
  • 2 teaspoons almond butter
  • 1 teaspoon vanilla
  • 1 teaspoon blue majik spirulina plus extra
  • 1 teaspoon maple syrup to taste

Instructions

  • Using a spoon, paint some yogurt (you'll use the rest for topping) on the interior wall of a large glass to make clouds. Sprinkle with a few pinches of blue majik and set aside.

  • Add the milk, avocado, banana, pineapple, almond butter, vanilla, 1 teaspoon blue majik, and maple syrup to a blender. Mix on high speed until very smooth.
    ¾ cup almond milk, ½ frozen avocado, ½ frozen banana, ¼ cup frozen pineapple, 2 teaspoons almond butter, 1 teaspoon vanilla, 1 teaspoon blue majik spirulina, 1 teaspoon maple syrup
  • Pour the smoothie into the prepared glass, then top with the remaining coconut yogurt and another sprinkle of spirulina. Serve immediately.
