Add the gin, lemon juice, simple syrup and egg white to a cocktail shaker and shake well. This is called a dry shake (no ice). Skip this step if using aquafaba.
2 ounces gin, 1 ounce lemon juice, ½ ounce simple syrup, ½ ounce vegan foamer or aquafaba*
Add the ice and shake again until you feel the shaker is very cold.
Strain into a coupe glass.
Garnish with a lemon twist a few drops of Angostura bitters, and serve immediately.

* If using aquafaba, skip the dry shake step. You can substitute egg white for a vegetarian alternative.
