Blueberry Toast

The most decadent way to have bread, blueberry toast is a creamy, toasty delight. With toasted white bread, thick yogurt, and sweet blueberry swirl.

Equipment

  • 1 toaster or frying pan
  • 1 Saucepan
  • Measuring cups and spoons

Ingredients

  • ½ cup thick coconut yogurt or ricotta if you eat dairy
  • 1 cup fresh or frozen blueberries
  • 2 tablespoons sugar
  • 1 tablespoon water
  • 1 teaspoon lemon juice
  • 2 slices soft white bread like brioche
  • Lemon zest to garnish

Instructions

  • Strain the yogurt if needed to make it thick enough to spread on the bread without it running off the sides.
    ½ cup thick coconut yogurt
  • Add the berries, sugar, water, and lemon juice to a small saucepan. Heat over medium until simmering and warmed through. Mash some berries with a spoon to make the mixture jammy.
    1 cup fresh or frozen blueberries, 2 tablespoons sugar, 1 tablespoon water, 1 teaspoon lemon juice
  • Toast the bread, then top with a thick layer of yogurt. Spoon some of the berry mixture over top (leaving any extra liquid behind). Top with lemon zest and serve.
