Ginger Sweet Potato Smoothie

The perfect autumn sweet potato smoothie with ginger, cinnamon and plenty of warming spices. Best of all, it's a smoothie recipe without banana! Recipe adapted from The Juice Truck.

Equipment

  • Measuring cups and spoons
  • Blender

Ingredients

  • 2 Thumb-Sized Pieces of Ginger peeled
  • ½ cup Baked sweet potato
  • ¼ ripe avocado
  • 1-2 soft dates pitted
  • 1 tablespoon cocoa powder
  • ¼ teaspoon cinnamon
  • ½ teaspoon Vanilla extract
  • 1 cup non-dairy milk or more as needed
  • A sprinkle of nutmeg for garnish optional

Instructions

  • Add everything to a blender. If your mixer isn't very high-powered, grate the ginger before adding.
    2 Thumb-Sized Pieces of Ginger, ½ cup Baked sweet potato, ¼ ripe avocado, 1-2 soft dates, 1 tablespoon cocoa powder, ¼ teaspoon cinnamon, ½ teaspoon Vanilla extract, 1 cup non-dairy milk
  • Puree until smooth. Top with nutmeg to serve. I tossed in some extra ice to make it nice and cold, but that's not necessary.
    A sprinkle of nutmeg for garnish
